10. Modification To modify starch via physical and/or chemical means to render its special properties
11. Saccharification To convert starch into sugar using the biochemical process
12. Fermentation To transform sugar into amino acids using specific micro-organisms
13. Hydrogenation To change the chemical structure of starch to simpler structure with hydrogen / water with high temperature and pressure
